Caritas made up a batch of this canned chicken recipe that I just love. You are suppose to grill it, but it is great just in a sandwich or plain. I just had some since I was feeling snackish. She got it here:

This sandwich cooks beautifully either on a nonstick skillet or in your George Foreman dual sided indoor grill. It's one of my favorites.

INGREDIENTS:

* 12-oz. can dark and light meat chicken, drained
* 1/3 cup mayonnaise
* 1-1/2 cups grated Swiss cheese
* 2 stalks celery, chopped
* 1 apple, finely chopped
* 12 slices whole wheat bread
* 2 Tbsp. butter

PREPARATION:
In small bowl, combine chicken, mayonnaise, swiss cheese, lemon juice, celery and apple. Make sandwiches with the bread. Spread outside of sandwiches with butter. Grill the sandwiches, covered, over medium heat, turning once, until cheese begins to melt and bread is toasted.

Serves 6

I have never been able to get past the idea of putting fruit and meat in the same bowl. I mean, I know people say it's good, I hear it all the time, but I just can't get by the IDEA.

The first time I had fruit and meat together was the chicken salad sandwich at Flag Fork Herb Farm. It had grapes. I was so weirded out by it. Slowly I am getting use to the idea. It helps that Caritas is good at the finely chopped and the flavors in this just mix very well.

We should go to Flag Fork for lunch some day. Since you are on this side of town. Heck we should actually meet. I drive on Loudon most days. I think they are almost done with closing the street.

We should. And we've said so before. Don't think we haven't because I don't want to or anything, lol. I swear, I really do. I am bad at making plans though.

We have a Foreman knock-off grill and I make tuna sandwiches in much the same way. But that sounds tasty. Thanks for sharing. :)
